Chocolate Mousse

8 oz chocolate
1/4 cup milk
1/4 cup heavy cream
4 egg yolks
3 egg whites
1 cup icing sugar
1 tablespoon dark rum

Break the chocolate into pieces and place in the top of a double
boiler (do not stir). Warm the milk and rum in a seperate saucepan
and mix into the melted Chocolate. Cool.

Mix the cream and the egg yolks together. Whisk a little of the
chocolate into the egg-yolks, then whisk the egg yolk mixture into
the chocolate mixture.

Beat the egg whites with the sugar until stiff. Lightly fold into
the chocolate mixture working quite quickly being careful not to
let the fluffy texture collapse. Transfer to individual serving
dishes and chill thoroughly.
