LETTUCE DISH (Gemusesalat) Germany
4 slices bacon
1 onion or 4 scallions, sliced
1/4 cup cider vinegar
1 tablespoon sugar
1/2 teaspoon salt
1/8 teaspoon black pepper
1 1/2 quarts shredded lettuce
2 hard cooked eggs, sliced
Saute bacon until crisp. Remove. Crumble. Reserve. Brown onion in
bacon drippings. Add vinegar, sugar, salt and pepper. Bring to a
boil. Pour over lettuce. toss. Garnish with crumbled bacon and
sliced eggs.
