Gulaschsuppe (Goulash Soup)
2 Tbsp. oil or butter 1/2 pound beef, cubed (doesn't say any specific cut) 1 small onion paprika (doesn't say how much) 4 Tbsp. flour 1 1/2 - 2 quarts beef stock 2 small potatoes, cubed lemon juice or 1 tsp. vinegar
Fry the diced onion on the oil until it's golden yellow. Add the beef which has been cut into small cubes, and the paprika. Simmer for 1/2 hour. Sprinkle with flour, then slowly add the beef stock. (I've found that german recipes always thicken this way - I always mix the flour with a small amount of cold stock and then add it to the rest of the stock once it has come to a boil). "1/2 hour before it's done" (I swear the cookbook says this.. I guess you should simmer the other ingredients for a while first...) add the cubed potatoes to the soup. "To taste" add the lemon juice or vinegar right before serving. (The beef stock used here in Germany is pretty salty - you'll want to add salt if necessary depending on the saltiness of yours).
