SCHWEINEHAXEN (Ham Shanks)
1 1/2 to 2 pounds ham shanks
3 cups water
1 tablespoon salt
6 juniper berries
1 bay leaf
Black pepper to taste
1/2 small onion, coarsely chopped
Put ham shanks in a pot and cover with 3 cups of water. Add 1
tablespoon of salt, berries, bay leaf, pepper to taste and onion.
Bring to a boil, cover, and reduce heat to a simmer and let cook
for 2 1/2 hours.
