Kaiserschmarren

100 g (3.5 oz)white flour
4 eggs
pinch salt
2 drops lemon essence
250 ml (9 fl oz)double cream
75 g (3 oz)currants
75 g (3 oz) blanched ground almonds
4 T clarified butter or vegetable oil

Sift flour into mixing bowl and make well in center. Beat eggs,
salt, lemon essence, and cream and pour some of this mixture into
well. Working from center, combine liquid with flour gradually
adding liquid and making sure no lumps form. Finally add currants
and almonds.

Heat butter or oil and add some dough (1/2 inch thick) Fry until
golden underneath, then using 2 spoons tear into small pieces and
brown, turning frequently, about 8 minutes.

Serve with apple puree or stewed cherries, dust with powdered sugar.
