Kaiserschmarren

1/8 kg flour
60g sugar
4 eggs separated
roughly 1/8 l milk
a pinch of salt
50g raisins
butter for the pan
sugar to dust

Beat together milk, egg yolks, sugar and flour. add the salt an
stir in the raisins. beat the egg whites to form firm peaks, and
then fold in.

Melt butter in a pan, pour in the dough and allow to bake golden
brown on one side, and then turn. After about one minute tear the
thick pancake into shreds with two forks, and carry on baking for
about two minutes, occasionally turning the pieces as you do so.
Allow the kaiserscharren to lose a little of the steam, and serve
dusted with sugar.

Serve cranberry sauce with it if desired.
