Plum Coffee Cake
(Baking Powder Kuchen)

1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (2 sticks) butter or margarine, at room temperature
1/4 cup sugar, divided

2 large eggs
1/2 teaspoon grated lemon zest
10 red or purple plums, halved and pitted
1 teaspoon cinnamon, optional
1/2 cup chopped nuts, optional

Preheat the oven to 350 degrees. Grease and flour an 8-inch-square
baking pan. Set aside.

In a large mixing bowl, whisk together the flour, baking powder
and salt. Transfer to a piece of wax paper. Cream the butter or
margarine and 1/2 cup sugar together with an electric mixer on
medium speed. Add the eggs, one at a time, beating well after each
addition. Add the dry ingredients and lemon zest and mix well.

Spread the mixture evenly into the prepared pan. Arrange the fruit
over the top in rows, cut side down and pressing lightly into the
batter. Sprinkle the fruit with the remaining sugar, the cinnamon
and nuts, if desired. Bake 30 to 35 minutes, or until set and
lightly brown. Serve warm cut into squares. Makes 16 squares,
about 2 inches each.
