Peach Kuchen
3 1/2 cups all-purpose flour (about) 2/3 cup granulated sugar 1/2 teaspoon salt 1 package active dry yeast 1/4 cup milk 1/2 cup water 1/2 cup margarine 2 eggs, at room temperature 1 cup firmly packed brown sugar 1/2 teaspoon ground cinnamon 1/3 cup pecans, chopped 2 16-ounce cans sliced peaches, drained
In large bowl, mix 1 cup flour, 1/3 cup granulated sugar, salt, and undissolved yeast.
Heat milk, water and 1/4 cup margarine to between 120-130 degrees F. Margarine need not melt. Add to dry ingredients; beat 2 minutes at medium of mixer. Add eggs and 1/2 cup flour; beat at high speed 2 minutes. Stir in enough remaining flour to make stiff batter. Cover; let rise until doubled, about 1 hour.
Combine brown sugar, remaining granulated sugar, 1/4 cup flour, cinnamon, 1/4 margarine and pecans. Stir batter down; spread in greased 13x9x2 inch pan. Place peaches in rows on batter. Sprinkle nut mixture over peaches. Cover; let rise until doubled, about one hour.
Bake at 375 degrees F for 25 minutes. Serve warm.
