Pffernuessen
1 cup shortening 1 cup sugar
Cream these together.
4 eggs
Beat eggs in, 1 at a time. Add:
1/2 cup Karo corn syrup 1/4 cup molasses 1/2 teaspoon nutmeg 2 teaspoons cinnamon 1/2 teaspoon allspice 1/2 teaspoon ginger 2 teaspoons vanilla extract 2 teaspoons anise extract
Sift together, and gradually add to the mixture: 5 cups flour 1 teaspoon salt 1/4 teaspoon baking soda 5 teaspoons baking powder
grandma used to roll out the dough, and cut out the cookies with a thimble. I do not have the patience for that, so I make the dough into long snakes, and cut off small pieces with a knife. My mother has been know to roll the dough flat, and cut it into small squares with a knife.
The way that you cut the cookies will affect baking time, so... when I make snakes, I cut the dough to about the size of a pistachio nut. Then I bake them at 350 for 5 minutes, on a greased cookie sheet. If you use another method - well, the cookies should be still a little bit soft (Not too soft - you want peppernuts, not peppersofts.) They will harden a very little on cooling. The bottoms of the cookies will be lightly browned.
