Potato and Apple Strudel

1 lb Cooked Potatoes (450g)
10 oz Self raising Flour (275g)
8 oz Sugar (225g)
4 oz Butter (100g)
1 tsp Ground Cinnamon
Few drops vanilla Essence
2 lightly beaten Eggs
2.1/2 lb Apples (1.25kg)
3 oz Raisins (75g)
1 oz sugar (25g)
Some Extra Butter

Pre heat oven to 200C, 400F, Gas mk 6.

Mash the potatoes and then mix them together thoroughly in a large
mixing bowl. Add the sugar, eggs, butter and vanilla essence. Mix
together into a firm dough. If the dough is a little sticky then
add a little more flour.

Peel, core and slice the apples. Roll out the dough into a large
rectangle and then cover with the apple slices. Raisins and sprinkle
with a little sugar and the cinnamon. Fold in the sides and then
roll it up and brush with Melted Butter. Bake in the oven for 25
- 30 mins until golden brown.
