5 lbs red potatoes, cooked with skins on
5 stalks celery, chopped
1 large onion, chopped
3/4 lbs bacon, cut in pieces
3/4 cup white vinegar
2 cups water
1 cup sugar
1/3 cup fat from bacon
2 tablespoons flour
1/2 tsp salt
1/4 tsp pepper
2 tsp salt
While potatoes are cooking, chop celery and set aside. Chopp onions
and set aside Fry bacon, chop in to small pieces and set aside
Remove bacon from fat, add onions to fat and saute' Remove onion
from fat and remove fat from pan. Re-add 1/3 c fat to pan. Add
flour and brown slightly Add vinegar, water, salt, sugar and pepper
Cook until clear.
Peel potatoes and cut into slices while still hot. Add the 2 tsp
salt to hot peeled potatoes. Add onion, celery,bacon and sauce to
