Baked German Pancake
3 large eggs 1 cup milk 3/4 cup flour 1 tsp vanilla 7 Tbsp butter or oleo 1/8 tsp nutmeg 1/2 tsp salt (opt) 3 or 4 tart apples 2 Tbsp sugar 1 tsp cinnamon
Preheat oven to 425 degrees fahrenheit. Put eggs and milk in a blender and mix. With the blender running, slowly add flour and salt. Add vanilla and nutmeg. Mix until mixture is smooth and uniform.
Melt 3 Tbsp of butter in a cast iron skillet. Pour egg mixture into skillet and bakein the oven at 425 degrees F for 20 minutes or until golden brown at the edges and firm in the center.
While the pan is in the oven, melt the remaining butter in a skillet. Peel, core and slice the apples. Fry the slices in the butter until softened. Sprinkle with sugar and cinnamon to form a compote.
Serve hot apple compote over pancake.
You may like other fruit, maple syrup, or ... on the pancake rather than the apple stuff.

I searched dozens of recipes and read the reviews.This one used a moderate amount of eggs but lots of apples.You may want to add more spice to batter (i.e)Allspice,dash of Cinnamon and more Nutmeg.To make this easier if you have guests prepare the apples ahead of time and re-heat.I also added more sugar and Cinnamon to apples whiles frying which a caramel like sauce.(about 1/4 cup sugar)This feeds 2 very hungry people or 4 if you have other things for breakfast.
