Dutch Baby**

4 " pan size:
1 egg
1/4 cup milk, 1% lowfat
1/4 cup flour
1 tablespoon butter

Turn on oven first to 426 degrees F then get out skillet. I like
cast iron, but any pan with straight sides will work. Place
butter/margarine in skillet and put in oven. Mix egg, milk and
flour (I had better results by using my blender to mix this). When
margarine has melted in pan in oven, remove pan from oven and pour
batter into pan, then return all to oven. Bake 15-20 minutes.
Will be golden brown and puffed up in the center when done; when
removed from oven the center will collapse.

Eggs Milk Flour Butter Pan size
3 3/4 c 3/4 c 3 T 2-3 quart
4 1 c 1 c 1/4 c 3-4 quart
5 1 1/4 c 1 1/4 c 1/3 c 4-4 1/2 quart
6 1 1/2 c 1 1/2 c 1/2 c 4-1/2 qt - 5 qt.


Serving Ideas : Good topped with fruit and sprinkled with powdered
sugar, or topped with sausage and cheese that's allowed to melt.
