Dutch Baby with Blueberry Sauce

6 eggs
1 1/2 cup low-fat milk
1 1/2 cup flour
1 pint blueberries
2 cup water
2 Tbsp corn starch
1/4 tsp salt
2 Tbsp lemon juice
6 Tbsp butter or margarine
powdered sugar

Heat blueberries and water until warm. Combine sugar, salt and
cornstarch; add to blueberries. Cook, stirring until thickened and
clear. Add lemon juice. Process eggs in blender or food processor
for 1 minute. With motor running, gradually add milk, and then
flour. Blend for 30 seconds longer. In a preheated 425 degree oven
melt 3 Tbsp butter in a 10" oven-safe skillet or shallow baking
dish. Pour half of batter in hot butter. Bake for 20 minutes or
until puffy and golden. Remove from oven; spoon blueberry sauce
into center. Sprinkle with powdered sugar. Pour remaining batter
on top; bake for 20 minutes. Remove from oven. Sprinkle with powdered
sugar. Serves 6.
