RED CABBAGE WITH BEER
1 medium head red cabbage, shredded 1/2 - 3/4 cup red wine vinegar 2 Granny Smith apples, peeled, cored and sliced 1/2 cup sugar 3/4 cup water 1 medium onion, diced 1/4 cup (4 TBL) butter 1/2- 3/4 cup beer 1 small bay leaf pinch of cinnamon, ground cloves and allspice, or more to taste Salt and pepper to taste
Place all ingredients in a covered pot (I always use one of my Le Cruesets) and bring to a boil. Reduce heat and cook slowly for about an hour. Taste and adjust seasonings. If there's too much liquid, uncover and cook until most of the liquid is evaporated.

I didn't like red cabbage until I tried this recipe! Extremely easy to make (just throw everything in a pot and simmer). Goes beautifully with a schnitzel and German potato salad. I think this is slightly better than the stuff I get at local German restaurants! Try it, you'll love it!
