Red Cabbage

1 kg red cabbage
1 sourish apple
1 tbs sugar
30 gr lard
1/8 liter red wine
vinegar
lemon juice
water or beef stock
pepper

Wash and clean the cabbage and remove the stem. Cut it into fine
'noodles' and place it into a big bowl. Pour some vinegar and lemon
juice over the cabbage and let it rest for 15 minutes. Peel the
apple, remove the seeds and finely slice it. In a big enough pot
heat the lard and caramelize the sugar in it. Then add the cabbage
and the apple. Add a pinch of salt and cook slowly in little water
or stock until soft. Add the wine and season to taste with salt
and a little pinch of pepper.
