Red Cabbage With Apples
8 servings.

2 tablespoons butter or goose drippings
4 slices smoky bacon, diced
1 large onion, chopped
2 pounds red cabbage, shredded
1 pound apples, peeled, cored, and sliced
1/2 cup brown sugar
small pinch ground cloves
1 teaspoon ground allspice
1 teaspoon salt
1 2/3 cups red wine
2 tablespoons wine vinegar
1 2/3 cups stock (goose if possible, or chicken)

Melt butter or dripping in a large flameproof casserole and gently
cook bacon and onion until fat runs from bacon and onion is softened.
Put in cabbage, pressing down evenly, and cover with layers of
apple slices. Add other ingredients, cover tightly and simmer for
2 1/2 to 3 hours, checking occasionally to see if liquid needs
topping up with more water or stock. Taste and adjust seasoning
before serving.
