Rouladen
Yield: 4 servings

8 very thin slices of beef round, approx. 3x6"
8 thin slices Black Forest (or other) ham
Coarse grained mustard
1/2 cup finely chopped onion
1 tin rolled anchovies with capers
6-8 dill pickles, thinly sliced lengthwise
Salt and pepper
1 can beer
1 can beef bouillon

Saute onions until barely limp. Sprinkle beef slices with salt
and pepper Spread each slice of beef thinly with mustard Add a
slice of ham, the onion, anchovies and capers, pickles. Roll up
and secure with kitchen twine or toothpicks.

Brown rolls briefly in butter or oil. Add beer and bouillon to
cover. Simmer until tender.
