Salzberger Nockerlin

5 egg whites
2 Tbsp sugar
1 tsp. vanilla extract
1 tsp. lemon juice
3 egg yolks
2 Tbsp flour
1 1/2 Tbsp softened butter and 1-2 T sugar for the casserole
4 Tbsp hot milk
1 tsp. rum
2-3 Tbsp sifted powdered sugar

Preheat oven to 400-425 degrees. Beat egg whites until stiff.
Gradually add sugar, vanilla and a few drops of lemon juice until
the mixture us very firm. Mix egg yolks with flour; fold into
egg white mixture with a few brief strokes. Grease an oval dish
and generously sprinkle with sugar. Combine hot milk and rum;
transfer to dish.

Gently transfer batter to form 3 large mounds.

Place in oven and bake for 14-18 minutes or until golden. Serve
generously with powdered sugar.
