Schnitzel
3 pork loin chops 1/4 cup flour 1 teaspoon seasoned salt 1/4 teaspoon pepper 1 egg 2 tablespoons milk 3/4 cup fresh bread crumbs 1 teaspoon paprika 3 tablespoons shortening 1/4 teaspoon dill weed 3/4 cup chicken broth 1/2 cup sour cream, room temperature
Trim all fat from pork. Pound cutlets to about 1/4". Cut small slits around edges to prevent curling. Combine flour, seasoned salt and pepper in a shallow dish. Beat eggs with milk in another shallow dish. Mix breadcrumbs and paprika in another shallow dish. In big skillet, melt 2 Tbsp shortening. Dip cutlets in flour, then egg, then breadcrumbs. Saute until golden, about 3-5 minutes per side. Remove and keep warm. Repeat with remaining shortening and cutlets. Combine 1 Tbsp flour with dill. Add to skillet, scraping up browned pieces. Add broth, stirring until well blended. Stir in sour cream until heated through. Serve with (or over) schnitzel.
