Spaetzle

4 - 5 eggs
12 oz. wheat flour (3 cups)
1/2 teaspoon salt
1 teaspoon semolina flour
1/2 cup water

Mix eggs, flour, salt and semolina, stirring as much as possible
until the dough is smooth, sticky and not too firm. If it is too
dry mix in tiny amounts of water. It should not be as firm as
cookie dough and should fall slowly from a spoon.

If you are boiling with beef and broth, place the spaetzle press
over the pot as it boils and fill halfway with dough, then pressing
down slowly. The spaetzle will cook firm within a very short time
and then is ready to serve.
