Stollen 1/2 - 1 cup white raisins 1/4 cup dried currants 1/4 cup dices candied cherries 1/2 - 3/4 cup diced citron 2 tsp. fresh grated orange peel (or 1 tablespoon dried ground) 2 tsp. fresh grated lemon peel (or 1 tablespoon dried ground) Combine above in a bowl. Cover with brandy (or rum) and let soak for 48 hours (or more) at room temp. (stir at least 2 x's a day)
5-6 cups flour 1 1/2 cubes sugar 1 egg 1 cup cottage cheese 1 tsp. vanilla extract 1 tsp. almond extract 1 tsp. rum extract 1 tsp. salt 1/2 pound margarine (softened) 6 tsp. baking powder 1/2 - 3/4 cup finely ground almonds 1/2 - 1 cup milk Mix all dry ingredients in a large bowl In another bowl beat sugar, cottage cheese, margarine, extracts and egg on high speed until fluffy Add creamed mixture to dry ingredients and mix well adding milk until dough is nice and stiff (dough should not stick to your hands) Add fruit mixture and nuts and mix well Knead thoroughly and make into 2 loaves Make a slit lengthwise down the middle of each loaf Bake at 350 for 50-60 minutes Brush generously with melted butter and sprinkle generous amount of powdered sugar Wrap the loaf in a towel that has been soaked in brandy (or rum) and then seal with foil or a sealing bag. Soak towel daily for 7 - 10 days with brandy and re-wrap. Keep loaf in a cool place (but not refrigerated).
