Trout with Basil & Tomatoes

4 small trout
4 medium tomatoes
Juice of 1 lemon
fresh basil leaves
1 stick butter
salt
freshly ground black pepper

Rub the inside of the trout with salt and lemon juice and put a
few basil leaves into the body cavity of each fish. Melt the butter
in a large frying pan. Add some more basil leaves and the fish.

Saute over low heat for approx 15 minutes, then add the peeled
chopped tomatoes and a few grinds of pepper.

Saute for 5 minutes more. Serve the trout on top of the tomato
and basil mixture with any cooking juices poured over.
