Veal Schnitzel with Pancakes
serves 2

1 large shoulder blade veal chop ( bone in )
salt, pepper, paprika
3 eggs
2 Tbs liquid : broth, water or milk
1 cup flour
oil to saute

Cut the shoulder chop into 2 smaller chops Season to taste With a
fork beat eggs in one dish with a rim. Put flour in another plate
( you may season flour also if you wish ) Dip each chop in egg
mixture, then dip in flour Repeat and shake off excess flour. Fry
in skillet over med high heat until golden on each side, Lower heat
and continue to cook, turning only one more time on each side until
done.

Make schnitzel pancake. Mix remaining flour and egg. Add a few
tablespoons liquid to make a batter. Pour batter into pan and fry
till golden and done on each side. Serve along with schnitzel.
Nice with Vienesse Potato salad and cucumber salad.
