Sunk Apples
(Versunkene Aepfel)

1/2 c unsalted butter or margarine
1/2 c sugar
2 eggs
some drops lemon oil
1 pn salt
4 tbs. milk
1 3/4 c plus 1 tbs flour
2 1/4 ts baking powder
6-8 md apples

some apricot jam for brushing
3/4 c confectionary sugar
2 tbs lemon juice

Cream butter, add by and by sugar, eggs, lemon oil and salt. Combine
a little of the flour with baking powder. Add flour and milk
alternately to the dough and last the flour plus baking powder.

Butter a springform, fill in the dough.

Peel, core and quarter the apple. Give the top of the quarters some
lengthwise cuts and place the apples with the cut side upwards
evenly on the dough.

Bake at 400 F for 40 min. in the lower part of the oven.

Take cake out of oven, remove rim and brush immediately with the
apricot jam which should have been well stirred previously.

Last combine confectionary sugar and lemon juice and brush the
whole cake while still hot.
