Stuffed Grape Leaves
1 pound of ground beef 1 pound of ground lamb 2 cups of uncooked rice black pepper to taste 1 jar of grape leaves allspice to taste salt to taste 1 medium onion 1 tablespoon butter tomato sauce
Chop the onion very fine. Melt the butter in a saucepan and add the chopped onion. Cook until light yellow in color. Add the ground beef and lamb. Sprinkle with salt and pepper and allspice Cook until done. Remove from heat. Add rice and more spices.
Wash the grape leaves under running water. Dip the grape leaves in hot water for a few minutes then take out of water and drain. Open each leaf and put some of the meat and rice mix in the center of the leaf. Fold the end of the leaf over the filling and roll the leaf over to encase the filling. Place a few pieces of lamb with bone in the bottom of a pot Then place the stuffed grape leaves in the pan. Cover the stuffed grape leaves with tomato sauce and water. Place lid on pan and cook on medium high for 10 to 15 minutes. Reduce heat and continue cooking until the rice is done (about 45 minutes to 1 hour).
