Galatoboureko

1 cup sugar
6 egg yolks
1 cup fine semolina
6 cup milk
1 tsp vanilla
2 tsp grated orange rind
1/4 cup orange liqueur
24 sheets filo
Melted butter

Place egg yolks and sugar in a large sauce pan; mix well. Add
semolina and milk. Keep stirring mixture over med. heat until it
thickens. Take off heat and stir in butter, vanilla, liqueur and
orange rind. Cool. Place filo in pan, brushing ea. sheet with
butter. Put a layer of twelve on bottom of pan. Pour custard and
spread evenly in pan. Turn sides of filo on top of custard. Place
twelve more sheets of filo on top of custard, brushing butter on
ea. one and turning it under so it is nice and even. Cut through
to serving pieces (2"x2" sq.) Heat oven (350F); bake 45 minutes
or until golden brown. Cool.


SPICED SYRUP

2 cup sugar
1 cup water
1 tsp vanilla
2 Tbsp. orange liqueur
1 cinnamon stick

Combine all ingredients for syrup in sauce pan except for vanilla
and liqueur. Bring to boil. Simmer for 10 min. Add vanilla and
liqueur; pour over warm Galatoboureko. Serve warm or cold.
