Greek Potato Dish 1 kilo potatoes 1 kilo courgettes 1/2 kilo fresh tomatoes 6 cloves garlic, finely chopped 1 small bunch parsley, finely chopped 1 1/2 cups olive oil salt and pepper Cut the potatoes into round slices . Clean and wash the courgettes and cut them lengthwise into slices. Spread one layer of potatoes in a medium sized baking dish. Salt and pepp-er them. On top, spread a layer of courgettes, salt and pepper then half the chopped parsley. Spread on 3 of the finely chopped garlic cloves. Skin the tomatoes and add some more courgettes with the pulp of the tomato and continue adding a layer in turn - potato, then courgette, parsley, garlic and tomato. Add the oil and 2-3 cups of water. Bake in the oven around 180 deg. for about 1 hour.
