Greek Onion Soup
Yield: 4 servings

2 Tbsp olive oil
2 onions, chopped
2 garlic cloves, chopped
1 potato, chopped
1 tsp salt
pinch ground black pepper
a few bay leaves
1/2 tsp marjoram
1 cup yogurt
2 pint stock
1 Tbsp chopped parsley

Heat oil in a pot and gently fry the onion for 2 minutes. Add
garlic, potato and seasonings. Stir together. Add yogurt and mix
well. Pour in stock. Bring to a boil, cover and simmer for 20
minutes. Serves 4 Garnish with chopped parsley.
