Pastitsio

1/2 pound elbow macaroni or ziti
4 Tbs. butter, melted
2 eggs, beaten
1 cup grated Romano cheese

4 Tbs. butter
6 Tbs. flour
2 Cups milk
4 eggs, beaten

1 pound ground chuck, optional
3 Tbs. tomato paste, optional
1/4 cup dry red wine, optional
1/4 cup water, optional
1 tsp. salt, optional
1/4 tsp. pepper, optional
1/4 tsp. cinnamon, optional

Cook macaroni according to package directions. Drain and add melted
butter and eggs and stir. Mix in cheese. (Reserve some cheese
for top). Pour into oiled 9-inch square pan. Cream Sauce: Melt
4 Tbs. butter in saucepan. Stir in flour. Gradually stir in milk;
cook until thickened. Cool slightly and add beaten eggs. Pour on
top of macaroni. Top with reserved cheese and bake, uncovered,
for 45 minutes at 350 degrees.

Variation: Brown meat and onions in skillet. Add tomato paste,
wine, water, salt, pepper, and cinnamon. Simmer for 10 minutes.
Mix with cooked macaroni; then proceed with cream sauce. Use meat
when you want this for a main course and without the meat as a side
dish.

Serves 6-8
