Tzatziki

1 large cucumber, peeled and seed and finely chopped or grated
1 cup yogurt (or substitute as above)
fresh garlic to taste (1 or 2 cloves), minced
juice of 1/2 to 1 lemon
fresh dill to taste, finely chopped
salt & pepper

Place cucumber in a colander, add 1 tsp salt and toss well. Leave
to drain for 1/2 hour, then rinse off salt and squeeze out as much
water as possible. I roll it up in a tea towel and wring. If you
like it very thick, you should also drain the yogurt in a coffee
filter so some of the water drains out. Can do this overnight in
the fridge.
