Tzatziki
8 oz plain low-fat yogurt, strained 1 cucumber, peeled and seeded 2 tsps white wine vinegar 1 tbsp fresh dill, chopped 1 clove garlic, minced dash white pepper dash salt (optional)
Finely chop cucumber, place in colander and sprinkle with about a teaspoon of salt. Let sit for about 20 minutes to remove excess liquid. Rinse well and press between sheets of paper towel to blot up extra liquid. Straining the yogurt through a coffee filter will eliminate extra liquid. Let yogurt drain for about an hour or more. Combine all ingredients in a small bowl.

Great recipe- I skipped the dill and put in more garlic. The straining is all hocus-pocus- just make it a day ahead and refrigerate.
