Nesselrode Pudding

1 envelope gelatin
1/4 cup sugar
1/8 tsp salt
2 eggs separated
1/4 cup milk
2 tsp rum flavour
1/4 cup sugar
1 cup whipped cream
2 Tbsp chopped cherries
3 Tbsp mixed fruit

Mix gelatin, sugar and salt in top of double boiler. Beat egg
yolks, add milk and add to double boiler and cook 5 minutes. Remove
from heat and stir in 2 tsp rum flavour. Chill. Beat egg whites
till soft peaks form, add 1/4 cup sugar. Fold in milk mixture.
Fold in 1 cup whipped cream and set 1 hour. Stir in 2 Tbsp chopped
cherries and 3 Tbsp mixed fruit.
