Sausage Stuffing

2 medium onion, diced
4 stalks of celery, diced
1 pound butter
1.5 pounds Italian sausage (sweet or hot)
2 loafs of sliced white bread
2 tablespoons Bell's seasoning
1 teaspoon black pepper
2 teaspoons salt
2 cups water

In a large pot, cook on medium heat, the sausage, onions, and celery with 1/4 pound of butter. When the sausage is fully cooked and the onions and celery are soft, educe the heat to medium low and start adding bread broken into bite size pieces. After every 1/2 of a loaf of bread, add some of the seasonings and butter. Stir each layer. When all the bread has been added, add any remaining seasonings and the water. Simmer for 5 minutes and then remove from heat. After the stuffing cools, stuff your bird and the balance can be warmed as a side dish.
