Xmas Cake
2 pkts mixed fruit
2 tablespoons sherry
11 ozs plain flour
1 teaspoon spice
8 ozs sugar
1/2 lb butter melted
juice of 1 lemon
nuts if desired
1/2 teaspoon baking powder
pinch salt
5 eggs
Soak fruit in lemon juice, sherry and nuts. Sift flour, soda, spice
and salt add sugar and fruit, then stir in well beaten eggs and
butter, stir mixture for 4 to 5 minutes. Bake in 8" paper lined
tin for 3 hours in moderate oven about 300 degrees C.
