Christmas Steamed Pudding

1 cup beef suet, minced
1 cup melted butter
1/2 pound flour
1/2 pound raisins
1/2 pound currents
5 ounces candied orange and lemon peel
6 ounces brown sugar
5 eggs, beaten
4 ounces fine bread crumbs
1 teaspoon salt
4 ounces minced nuts
1 ounce cinnamon
1 ounce nutmeg
1/2 ounce allspice
1 cup rum

Sift flour and spices together. Mix with suet. Stir in all other
ingredients. Grease and flour a square of muslin. Turn out onto
the muslin. Place in a pan of simmering water with a plate on the
bottom. Simmer slowly for four hours.

Remove pudding and sprinkle with sugar. Pour heated rum over the
top and light.
