ALOO AUR SIMLA KI MIRCH (potatoes with green peppers) 900g (2lb) peeled and finely diced potatoes (aloo) 350g (12oz) seeded green peppers sliced into thin strips (simla mirch) 7 tbsp cooking oil (tail) 2 peeled and finely chopped small onions (pyaz) 1/2 tsp fenugreek seeds (methi dana) 1 tsp white cummin seeds (sabut safeid zeera) 1 tsp crushed garlic (lehsun) 1 level tsp turmeric (haldi) 1 level tsp red chilli powder (lal mirch) salt to taste (namak) 225g (8oz) finely chopped tomatoes (timitar) 1/2 C finely chopped fresh coriander (hara dhania) Heat the oil in a saucepan and brown the onions. When they are golden add the fenugreek and cumin seeds and stir until they turn a shade or two darker. This will only take a few moments. Then add the garlic, turmeric, red chilli powder and salt and stir together for a few min.s, taking care that the spices do not burn and ruin both the flavour and colour of the dish. Add the chopped potatoes and green peppers and simmer over low heat in a covered pan. After 5 min.s add the tomatoes, replace the lid and cook until both the potatoes and peppers are tender. Stir in the fresh coriander before removing from the heat to serve.

This worked really well. Does the other reviewer know that the potatoes should be cut quite small, and you should cook till tender? It tasted great!
