Butter Chicken

2 large chicken breasts
50g butter
1 large onion finely chopped
3 black cardamoms (optional)
1 large clove garlic, crushed
1 tsp chilli powder
1 tsp turmeric
1 tsp cumin
1 tsp ground ginger
1 tsp nutmeg
1/2 tsp pepper
1/2 tsp salt
1/2 cup cream
2 Tblsp tomato paste
1/2 tsp Garam masala

Skin chicken breasts and slice into strips. Coat each piece of
chicken in combined chilli powder, turmeric, cumin, ground ginger,
nutmeg, salt and pepper.

Melt butter in cooking pot, add onion and garlic and cook until
soft. Add chicken stirring until golden. Add tomato paste and Garam
masala. Stir in cream, then simmer gently for approx. 10 minutes.
Serve with rice.

We had made this recipe to the letter a couple of times and it was very good. But not paying attention, I once added an entire 8 oz. can of tomato paste and wound up compensating for it by adding more cream about 1/2 a cup of yogurt and a bunch of extra spices to taste (mostly some store bought curry powder and garam masala). Turned out the best it ever has!! Perfect really!
