Carrot Halwa 04

Vegan Gajar (carrot) Halwa
3 carrots, peeled and finely grated 1 1/4 cups soy milk 1 tablespoon vegan margarine 1/2 cup sugar or less 4 to 6 cardamom seeds, peeled and crushed A few raisins A few (unsalted) cashewnuts or almonds, cut into small pieces A few strands of saffron (optional)
Heat the margarine in a saucepan, saute the carrots in it for about 5 - 6 minutes and set aside. Bring the Soy milk to boil in a heavy saucepan (preferably non stick) on medium flame and add the spices to it. Fold in the sugar and carrots, and cook on medium flame, stirring occasionally. When the mixture is fairly dry, add the raisins and cashewnuts
Note that the final consistency of the preparation should be fairly solid (but soft). Serve either hot or cold as a side dish or dessert.
