Chai Tea

3-4 tablespoons sugar
4 tablespoons honey
1 teaspoon ground cardamom
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground mace
pinch ground cayenne
3 teaspoon vanilla
3 cups water
1 tea ball of favorite tea leaves

Combine all spices, tea and sugars with water and bring to a boil.
Turn burner to low and simmer for 10 minutes. Let stand and cool.
Strain spices and tea leaves, and store in glass jar in refrigerator.
Shake well before serving. Serve by adding 1/2 cup chai mix with
1/2 cup milk and heat, or serve cold.
