Indian Style Chai Tea

6 cups of cold water
2 long cinnamon sticks broken into 2 pieces each
1/2 cup of fresh ginger, sliced into 1/4 inch pieces
2 tsp. whole cardamom seed
1 tsp. whole clove
1/2 tsp. freshly ground black pepper
1 or 2 small bay leaves
sugar or honey to taste.

2 black tea or green tea bags
1/2 cup milk or half & half

Into a pot of cold water, put pieces of cinnamon sticks, fresh
ginger slices; whole cardamom seed; whole clove; black pepper and
bay leaves. Allow to simmer until amount reduces to about 4 cups,
and then sweeten with sugar or honey to your taste. You can either
drink it like this or when you're pouring it into a tea server,
add 2 black tea or green tea bags. Before serving, heat up (the
microwave is the easiest) about 1/2 cup milk or half & half and
serve together with chai.
