Chana Dal
To cook them, first sort and rinse well (they often have rocks). For one cup of the dal add 2 1/2 cups water. Bring to a boil, then lower heat and simmer until done, about an hour. Add the turka to this (recipe follows).
Turka
2 medium onions (chopped) 1 Tbsp. chopped ginger 1 Tbsp. chopped garlic 2 medium tomatoes 1 tsp. chopped fresh green chiles 1/4 cup oil or ghee 1 Tbsp. cumin seeds 1 tsp. salt 1 tsp. turmeric 1 tsp. coriander powder 1 tsp. Garam masala 1/4 cup chopped fresh cilantro
Saute onions, ginger, garlic and cumin seeds in the oil in a saucepan on medium heat until golden brown. Then add tomatoes and chiles. Cook for additional 2-3 minutes and then add salt, turmeric, coriander powder and Garam masala. Cook another 5 minutes on low heat, being careful not to scorch it. Add this to your cooked dal, garnish with the chopped fresh cilantro.
