3 Tbsp. vegetable. oil
1 large onion, sliced
1 cinnamon stick
4 cardamom pods
2 bay leaves, crumbled
1 chicken, about 3 pounds, cut in pieces
1/4 tsp turmeric
1/2 tsp chili powder
1/2 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp ground ginger
1/2 tsp. ground allspice
2 garlic cloves, peeled and pressed
1/2 cup plain yogurt
Heat the oil in a large saucepan over medium heat. When hot, add
the onion, peppercorns, cinnamon, cardamom pods, cloves, and bay
leaves, cook, stirring frequently, until the onion becomes light
Add the chicken pieces and cook, stirring frequently, until the
meat is seared on all sides.
Sprinkle in the turmeric, chili powder, coriander, cumin, ginger,
allspice, and salt to taste. Stir in the garlic and yogurt. Continue
cooking, stirring occasionally, until the chicken is well colored.
