Chicken Madras
The ingredients will make 8 portions I like to freeze them for a few weeks it enhances the flavour.
Ingredients
Spices 1:
1 teaspoon of ground black pepper
1 or 1.5 teaspoons of chili powder
2 teaspoons of fenegreek seeds
2 teaspoons of cumin powder
2 teaspoons of turmeric powder
8 whole green cardoman
6 or 8 dried red chillies
Spices 2:
2 tbs of Garam Masala
2 tbs of (Methi) fenegreek leaf ground
1 tbs salt
Main ingredients:
6 skinned and boned chicken breasts cut to bite sized pieces
2 tins of chopped tomatoes or one of tomato frito one of chopped toms
800 gramms
1 tea cup of oil veg or sunflower
3 tbs tomato puree
2 onions chopped fairly coarse
Juice of 2 limes
large knob of ghee (optional)
Method:
Heat the oil in a saucepan and add chicken just to seal it
about 4 or 5 mins.Remove chicken with a slotted spoon and
transfer it to a casserole dish.fry the onions until transluscent in the same oil,Then reduce the heat and fry spices 1 stirring to prevent sticking for 5 minutes.
Mix in tomato puree then add tinned tomatoes increase the heat to simmer for 5 minutes.Add this to the casserole with the chicken put in a pre-heated oven 170c for 20 mins,remove stir and cook for another 20 minutes.Stir in spices 2 and the lime juice.return to the oven but turn it off for 10 minutes. stir in the ghee if you are using it.

I followed this recipe to the letter and yes it was excellent,but next time I will add a little more chilli powder.but thats a question of taste

i followed it to the letter also and i did injoy it very much i did add alittle water to the dish in the oven after 20 mins as mine was starting to look a little dry but the water sorted that problem out, end result was a tasty curry thanks
