CURRIED GARBANZO BEANS AND POTATOES

2 tsp. veg oil
1 yellow bell pepper
1/2 c. chopped onion
1 T. plus 1 tsp. flour
1 tsp. curry powder
1/2 tsp. salt
1/2 tsp. cumin
1/4 - 1/2 tsp. pepper
2-1/2 c. water
1-3/4 c. diced potato
1 c. sliced apple
1 c. peas
1 15 oz. can garbanzos
6 c. cooked rice

Heat oil in a large nonstick skillet over medium heat. Add bell
pepper and onion; saute 6 minutes or until tender. Sprinkle with
flour and the next four ingredients. Stir well, and cook for an
additional 30 seconds. Add water and potato; reduce heat, cover,
and simmer 25 minutes or until potato is tender. Add apple, peas
and beans; cover and cook an additional 10 minutes. Serve over
rice. Serves 6.

simple to make, and the apple softens so nicely you don\'t even notice its there when you serve it. pretty atop white rice and makes a fancy meal to impress your vegitarian friends.
