Dum Aloo

10 small white potatos
1 large onion(crushed)
1 large tomato(crushed)
4 cloves of garlic(crushed)
2 inch ginger crushed
1 large cardamom(moti elaichi)
1 tsp cummin seeds
3 cloves (long)
1 inch piece of cinnamon(daalchini)
2 tsp coriander powder
1 tsp red chilli powder
1 tsp garam masala powder
salt to taste
1/4 cup coriader (cilantro leaves) chopped
3 green chillies

Make a paste of ginger, garlic, chillies, cinnamon, big cardomom,
and cumin. Peel potatoes and pierce them with a fork. Fry till
golden. Place in a plate.

In the same oil, fry the ground masala, garlic and onion. Put in
onions. Fry for 3 minutes.

Add dry masalas. Fry for 2 minutes.

Add potaoes. Fry for 2 minutes.

Add tomatoes. Fry for 3 minutes.

When the oil separates add 1 cup water. Cover and cook for 10
minutes on low heat. Add coriander leaves and serve hot with
tortillas/roties.
