Kathirikka Pachadi (Kerala) 2 large round brinjals (or 8 small ones) 1 large onion cut fine 2 or 3 green chillies cut fine 1/2 tsp salt 2 red chillies roasted and broken into 2 or 3 1 to 1 1/2 tsp thick tamarind juice (can use lime juice if unavailable) 1/2 cup thick coconut milk
Roast brinjal under hot ash until soft and well cooked. Alternatively it can be baked in an oven. Peel off the skin and take out the white pulp inside.
Put the minced onion, green chillies, salt and red chille wit the pulp in a bowl and mix well by kneading by hand. [use a spoon if you have sensitive skin!]
Pour the coconut milk and tamarind juice and mix again.
Serve with rice. (nice scooped up with chapatis too)
