Karela-Paneer

2 onions
5-6 Karela (bitter melon)
2 Tomatoes
4-5 Green Small green chilli
ginger
garlic
1/3 Fresh Lemon
paneer (enough to stuff karelas)
red chilli powder
turmeric powder (halthi, dhanya)
salt
pinch of sugar
cilantro for garnish

Scrap off karela skin, and make slit in middle and remove all the
seeds from inside, karela should be hollow. Apply salt generously
on the karela and set aside.

Lightly fry Paneer, when paneer is cooled down, mash the paneer.
Add salt, sugar, lemon juice, little red chili powder and mix.

Wash karela so that all the salt is washed off (make sure you
squeeze out all of the water). Fry karela until golden brown.
Remove from oil.

After karela is cooled down, stuff the karela with the paneer
mixture and set aside.

Now we make the masala. Heat oil, Add onions and cook till onions
are golden, add finely chopped ginger and garlic, then add green
chili cut long and finely chopped tomato and cook till tomato is
dissolved. add red chilli powder, turmeric powder (halthi, dhanya),
and very little salt. Cook till oil begins to show, then add little
water to get the desired sonsistency in the masala (it should not
be too dry).

Put the stuffed karela in the serving dish, then put the masala
(gravy) on top of the karela, garnish with fresh cut cilathro.
