Laoo Dhal, a West Bengali dish
2 T ghee or oil 1 large onion, chopped 1/2 t ground turmeric 1/2 t cumin seed 1 hot red pepper 1 bay leaf
1 C red lentils 3/4 t salt 1 t sugar 2 C water 2 C zucchini, cubed
Heat ghee or oil in saucepan. Add onion, turmeric, cumin seed, pepper and bay. Fry 1-2 minutes. Add lentils, salt, sugar and water. Bring to boil. Reduce heat and let simmer for 15 minutes. Add zucchini.
Stir to mix. Return to boil. Reduce heat again and cook covered. Stir occasionally. Cook until zucchini is tender and split lentils are cooked to almost puree consistency. (If using lentils which are whole, wait 5 minutes longer before adding the zucchini.) It doesn't take very long.
Serve as a thick soup accompanied by flatbread. Or serve with (or over) brown rice.
