Mint Chutney 02

Fresh Mint Relish (Podina Chutney) Makes 1 cup 3 cups loosely packed mint leaves (without stems) 2-3 green chilies, seeded 3 Tbsp. finely chopped onions 3/4 tsp. grated fresh ginger root 3/4 tsp. kosher salt 1 1/2 tsp. sugar 1 1/2 Tbsp. lemon juice 3 Tbsp. water
Put all ingredients in container of food processor or blender and blend until reduced to a fine, smooth puree. (This will take a few minutes more in blender because of the lack of liquid. You will need to push ingredients down, scraping sides of container from time to time.) Cover, and chill thoroughly before serving. Taste for flavoring, and if desired, add more salt and sugar.
Note: This relish keeps well in refrigerate for a week. It also takes well to freezing except that the liquid separates from the pump. Therefore, be sure to stir relish thoroughly before serving.
